Rungeto farmers cooperative is located in the Kirinyaga region. Currently, they have more than 3500 members, who grow their coffee at an altitude between 1600-1800 metres above sea level. This current lot was processed in the Kii washing station, which was built in 1995 and is located on the foot of Mount Kenya.
Ripe cherries are first sorted and then pulped. The parchment coffee is then let to ferment for 8-12 hours. The following washing stage removes the mucilage from the beans and the coffee is ready to be dried. Drying takes 2-4 weeks, depending on the weather.
Cooperatives in Kenya are currently changing their facilities. They invest in modern pulping machines, which have additional gadgets that remove mucilage during pulping. This will make the processing more efficient and sustainable because they can skip the fermentation stage, which saves not only time and money but also a lot of water.
