Ethiopia is a cradle of coffee and the fifth biggest producing country in the world. Birbissa, which is the name of the cooperative that produced this coffee means in the Oromiffa language shade tree. Using shade trees on the coffee farms is crucial. Thanks to them the coffee cherries have more time to ripen and so produce more aromatic compounds. Association into cooperatives is very common in Ethiopia. Local farmers usually don’t have big lands so their production is low, so it would not pay off to process their coffee themselves. This coffee was processed by natural method, and thanks to that, this coffee is very sweet with notes of berries and forest fruit.

Etiopie je kolébkou kávy, je to pátý největší producent na světě. Birbissa v jazyce Oroomiffa znamená druh stromu, který stíní kávovníky, kteří díky tomuto mají více času na to, aby třešně dozrály a získali tak své chuťové vlastnosti. Tato káva pochází od 21 farmářů. Sdružování farmářů do tzv. cooperatives je v Etiopii běžné. Místní farmáři totiž nevlastní velká pole, jejich sklizně jsou tedy velmi malé a nevyplatilo by se jim kávu zpracovávat samostatně. Často pro to ani nemají dostatek znalostí. Tato káva byla zpracována naturální metodou, která jí dodala vysokou sladkost, tóny lesního ovoce a bobulí.
